As usual this time of year if you have a zucchini plant or two you
have too much zucchini! My Dad & I came up with a new recipe
last night on the grill when we had a family cookout. I don't
measure things when I cook so all measurements are approximate.
Zucchini Mushroom Onion Fry

1 10-12"zucchini
2 small cans mushrooms drained (fresh would be good too)
1 small to medium onion cut up in strips
2 Tbls. Olive oil
1 Tbl. Worcestershire sauce
heavy sprinkle of garlic salt
heavy sprinkle of Cabela's Tequila Lime seasoning
*6-8 cloves fresh roasted garlic cut in 3-4 pieces each
Mix all ingredients together in bowl. Cook on grill if
you have a grill stir fry pan or a griddle or fry in skillet over
med. high heat until golden brown.
Serves approx. 6
*cut tips off of garlic cloves still attached to bulb, place in
garlic roaster or microwave safe glass dish covered, drizzle
with olive oil, microwave for aprox. 90 seconds. Let cool. Pinch
cloves out of paper like skin and prepare as needed.
